The first chapter gives thorough information on
choosing gluten-free foods. Gluten-containing and gluten-free
ingredients are listed to help the reader decipher food labels. The
relevant government labeling regulations (both Essential information on living well with a gluten-free diet is provided. Descriptions, practical use and nutrition information is given for many alternative grains. The tips for using these difficult grains reflect the author’s many years of helping clients adapt to a gluten-free diet. Every-day recipes using ingredients that are available at most “health food stores” are included. The information on shopping for gluten-free products is an extremely valuable section. There are very few drawbacks to this book. Low-literacy clients may need assistance to understand some paragraphs. However, the extensive tables are easy to understand and they alone make this a valuable reference. Information on choosing gluten-free meals in restaurants and “non-food” sources of gluten is not included. The client may need additional information on these topics. |
